Easy Cookie Butter Truffles

Cookie butter truffles – a delicious, easy, no-bake dessert loaded with cookie butter flavor that is perfect anytime you want a sweet treat! 

I know I am not the only peanut butter ball (buckeye) fan on earth… but when I got the idea to make Cookie Butter Truffles that looked just like buckeyes, I couldn’t find a recipe for them- so I went ahead and created one! These cookie butter truffles are so good and they can be made with a very little active time.

First assemble the following ingredients:

  • Creamy cookie butter (2 cups) – Adds a rich, spiced sweetness with warm notes of cinnamon and caramelized cookies.
  • Unsalted butter (¼ cup) – Provides smooth richness and helps bind the truffle filling together.
  • Sea salt (¼ teaspoon) – Balances the sweetness and enhances the depth of flavor.
  • Pure vanilla extract (½ teaspoon) – Infuses a warm, aromatic note that rounds out the cookie butter’s spice.
  • Confectioners sugar (2 – 2 ½ cups) – Sweetens and thickens the filling, giving it structure and a smooth texture.
  • Chocolate chips (1 cup) – Create a rich, indulgent coating for the truffles with deep cocoa flavor.
  • Vegetable oil (1 tsp) – Helps thin the melted chocolate for a smooth, glossy coating.

Mix Batter

Combine butter, sugar, salt, cookie butter, and vanilla until mixed well. It should be tacky but not too sticky, add more powdered sugar if necessary.

Chill

Roll small 1 inch balls and chill on wax paper in the freezer for 1 hour. When truffles are ready melt chocolate and add the oil, mix.

Dip and Chill

Dip the balls in the chocolate using toothpicks or a truffle fork, set on wax paper. Set in the fridge and bring them out a few minutes before eating. Enjoy!

Tips and Tricks to make easy No Bake Desserts

To make effortless Speculoos No Bake Truffles, there are a couple of tips and tricks that will help you get the best results! 

Chill a baking sheet – Before making these truffles, I like to pop a baking sheet in the freezer so it is nice and cold – making the truffles solidify faster and more beautifully. 

Thin your chocolate – To help your chocolate glide over your truffles effortlessly – making them extra shiny and smooth, thin the chocolate with a little vegetable oil. Just a tiny bit will do – or you’ll have greasy chocolate. 

Use high quality cookie butter – Since this recipe is so simple, you need to be sure you have a cookie butter you absolutely love – whether it is speculoos, Biscoff, or another brand. Make sure you love the flavor! 

Dust your hands with sugar or cocoa – If the mixture still feels sticky when rolling, lightly dust your palms with confectioners’ sugar or cocoa powder.

Dip with a fork– Use a fork to dip and lift the truffles, tapping lightly on the bowl’s edge to remove excess chocolate.

Decorate quickly – Add sprinkles, crushed cookies, or drizzle before the chocolate sets so the toppings stick.

What kind of cookie butter works best for truffles?

Creamy cookie butter works best because it blends smoothly with the butter and sugar, but you can also use crunchy cookie butter for extra texture.

Can I use white or milk chocolate instead of dark chocolate?

Absolutely! White, milk, or even ruby chocolate all pair beautifully with cookie butter depending on your flavor preference.

My truffle mixture is too sticky—what should I do?

If the mixture feels too sticky to roll, add a little more confectioners’ sugar until it firms up, then chill again.

How long do cookie butter truffles last?

They’ll keep in an airtight container in the fridge for up to 1 week, or you can freeze them for up to 2 months.

Can I decorate the truffles?

Yes! Try drizzling with melted white chocolate, sprinkling with crushed speculoos cookies, or dusting with cocoa powder.

Ingredients 

For the Chocolate Coating:

Instructions 

  • In a large bowl, combine butter, sugar, cookie butter and vanilla until mixed well. Your butter will need to be soft but not melted for this to work.
  • When dough is well mixed it will be slightly tacky but not too sticky. If it is still very sticky to the touch, add more powdered sugar, a teaspoon at a time.
  • When the dough is ready, roll into small balls about 1″ large.
  • Place on wax paper and chill in fridge or freezer for at least 1 hour.
  • When truffles are ready, melt chocolate 35 seconds at a time in microwave, stirring in between each time in until fully melted.
  • Add 1 tsp vegetable oil and mix. If chocolate is slightly runny (comes off a spoon in ribbon, not in clumps), it is ready. If it is still too thick, add more oil slowly (a drizzle at a time- you dont want too much.)
  • Using a truffle fork (or toothpick), dip balls into chocolate and remove to set on wax paper.
  • When all balls are coated, set in a cool, dry place to set. I like to keep them in the fridge and pop them out a few minutes before eating so they are slightly cool.
  • Keeps up to one week in an airtight container in the refrigerator.

    I so want to try these as I LOVE cookie butter!! Susanne, you can find Cookie Butter at Trader Joes if you have one near you. It’s a lot more expensive, but if you don’t have a Trader Joes, I got mine from Amazon before we had one by us. DELICIOUS and really not horribly bad for you!

      Susanne, Cookie butter is basically ground up cookies (usually gingersnap tasting cookies) that are made into a spread, like peanut butter. It is really big in some Scandanavian countries…. totally sinful.
