This recipe was inspired by our one pot pork loin and potatoes recipe – adapted as a tasty side dish without the pork loin, and with potatoes that are crispier on the outside and fluffy on the inside. These baby yukon gold or dutch potatoes are perfect alongside chicken thighs or pork chops – but are fancy enough for Christmas dinner with ham, turkey, or prime rib.

How to Roast Garlic Butter Potatoes
To make garlic butter roasted potatoes, you’ll need:
- Celtic Sea Salt (1 tbsp or to taste):
- Salt enhances the natural flavor of the potatoes and other ingredients, while black pepper adds a mild heat and depth to the dish. Together, they season and elevate the overall taste.
- Fresh Cracked Pepper (1 tsp):
- Pepper adds a wonderful heat to these potatoes that balances all the flavors out.
- Butter (4 tbsp, sliced into pats):
- Butter is a source of fat that helps achieve a rich and creamy texture for the roasted potatoes. It also contributes a delightful buttery flavor as it melts and coats the potatoes during roasting.
- Diced Garlic (2 tbsp):
- Garlic is known for its pungent, savory flavor. When roasted, it becomes mellow and slightly sweet, infusing the potatoes and butter with its aromatic essence.
- Dried Basil (1 tsp):
- Basil adds a subtle herbal and slightly sweet note to the dish. It complements the earthy flavors of the potatoes and other herbs.
- Dried Oregano (1 tsp):
- Oregano provides a robust, slightly peppery flavor with hints of citrus. It adds depth to the dish and pairs well with potatoes.
- Dried Thyme (1 tsp):
- Thyme contributes earthiness and a mild, woody flavor. It enhances the overall herbaceous profile of the roasted potatoes.
- Dried Parsley (1 tsp):
- Parsley brings a fresh, grassy note to the recipe. It adds a touch of brightness and balance to the dish.
- Dried Sage (1/2 tsp):
- Sage offers a distinctive, slightly peppery flavor with hints of eucalyptus and citrus. It complements the other herbs and adds complexity.
- Italian Herb Seasoning Blend (2 tbsp, optional):
- If you choose to use an Italian Herb Seasoning Blend, it typically contains a combination of herbs like oregano, basil, thyme, and rosemary. This blend simplifies the seasoning process and imparts a classic Italian flavor profile.
- Red and Yukon Gold Potatoes (1 lb, halved):
- Red and Yukon Gold potatoes are varieties known for their creamy texture. They absorb the butter and herb flavors beautifully and provide a hearty and satisfying base for the dish.
- Diced Onion (1 cup):
- Onions add a savory and slightly sweet element to the roasted potatoes. They caramelize and become tender during roasting, enhancing the overall flavor.
Once you’ve gathered the ingredients you’ll need, we will follow this method:
- Prep. Preheat oven to 425 degrees. Line baking sheet or roasting pan with parchment paper or prepare with cooking spray. Combine the melted butter, garlic, pepper, and fresh herbs. Wash potatoes well and cut in half, and pat dry. Arrange potatoes and onions baking sheet so potatoes aren’t touching too much. Drizzle butter, onion, and herbs mixture over potatoes and onions and toss lightly to coat in herb butter. Sprinkle 1 tsp of the sea salt over the potatoes.
- Bake. Roast 20-30 minutes, checking temperature after 20 minutes. When potatoes are slightly browned outside and are soft to the touch, they are done. Taste the potatoes and add the rest of the sea salt (2 tsp) slowly tasting as you go.
- Crisp more. To crisp before serving, pop under broiler for 5 minutes, stirring halfway through (optional).
- Serve. Serve and enjoy!
Tips and Tricks to Perfect Roasted Potatoes
Roasting potatoes is a simple and delicious way to prepare potatoes involving high temperature, dry heat. Roasting potatoes in the oven gives a slightly crispy outside and light, fluffy inside – making them the perfect side for any meal. We’re taking these potatoes to the next level by tossing them in a garlic butter with tons of herb and onion flavor.
Tools you’ll need. To make this recipe, you’ll need a large roasting pan (without the rack) or baking sheet to spread the potatoes out on.
Cut in half. We made this recipe using yukon gold and red potatoes, cut in half – but you can use other types of potatoes using our tips below.
Know your potato. You can use lots of types of potatoes with this recipe – using our tips below:
- Fingerling potatoes. Wash fingerling potatoes well, and pat dry. You can leave whole or cut in half.
- Russet potatoes. Use 2 russet potatoes. Wash russet potatoes well and pat dry. Cut into 2″ chunks.
- Blue potatoes. Use 10-15 small blue potatoes. Wash well and pat dry, and cut into 2″ chunks.
Soak potatoes. While we’re not calling for soaking potatoes in this recipe, because we’re going for a softer potato side dish, you can get crispier, crunchier roasted potatoes by soaking in cold water for 1 hour before roasting. Be sure to rinse well after (to remove the starches that soak out) and pat dry thoroughly before roasting.
Recipe FAQ’s
Potatoes are done when they are soft to the touch, not based entirely on time. Lightly press potato with a fork – if it gives, it is done.
You can crisp potatoes once cooked by popping under the broiler for 5 minutes. Stir partway through, and watch to be sure potatoes don’t burn under the broiler.
If you don’t like onions, you can increase garlic, use diced shallots, or skip onion entirely.
Varieties like Yukon Gold, red potatoes, or russets work well. These have a good balance of starch and moisture content, which helps achieve both a creamy interior and crispy exterior.
Whether you peel the potatoes or leave the skins on is a matter of personal preference. Potato skins can become crispy and add texture, but peeled potatoes can also be delicious. It’s up to you.
Parboiling typically takes about 5-7 minutes. You want the edges of the potato pieces to be slightly softened, but not fully cooked. Test with a fork; they should offer some resistance.

- Sprinkle 1/3 of the sea salt (1 tsp) on the potatoes.
- Roast 20-30 minutes, checking temperature after 20 minutes.
- When potatoes are slightly browned outside and are soft to the touch, they are done.
- To crisp before serving, pop under broiler for 5 minutes, stirring halfway through (optional).
- Taste the potatoes and then add the remaining 2/3 of the salt (2 tsp more) or to taste

Potatpes were tasty enough but the recipe was confusing. It says ‘Drizzle butter, onion, and herbs mixture over potatoes’ but only says to mix the herbs in the melted butter. So does the onion get mixed in as well and nowhere does it indicate what to do with the garlic….

There are instructions in the top part of the recipe about how to parboil potatoes, yet the baking instructions simply say to wash, halve and pat dry before putting the baby potatoes in the pan. Do I need to parboil the for 5-7 minutes (or not)? I’d like to be sure they’re likely to be done in 35-40 min…
You don’t need to parboil. I have corrected the top of the post to clarify. The recipe is at the bottom, you can click the “skip to recipe” button to go straight there if you don’t need the extra tips.
