Hearty, rich, and delicious steak fajitas are one of my favorite easy dinner ideas – they are incredibly quick to make, don’t require a ton of ingredients or equipment, and are amazing in wraps, tacos, burritos, and over salads or served with rice and beans.

Fajitas are great for a crazy weeknight – but also fun for a dinner party, especially as a make your own fajita bar!

This recipe for one pot steak fajtas is one of our family’s favorites – we make these at least once a week. It also makes amazing leftovers!

Steak Fajita Seasoning Recipe

Since fajitas are such a simple dish, these steak fajitas definitely need a fajita seasoning blend that you really love.

You can use store-bought fajita seasoning – or I’m suggesting one I really love below.

Some fajita seasonings use up to 1 tsp of sugar in them – I don’t love sugar in my fajita seasoning mix, so I skip it – but you can add anywhere from 1/2 – 1 tsp white sugar if you’d like!

Steak Fajita Seasoning

  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon ground cumin

How To Make Steak Fajitas Sizzle

To present this recipe as sizzling fajitas, like your favorite restaurant, you will need to make a little bit of modifications – but it’s really simple!

  • First off, you’ll want to NOT cook your fajitas in a cast iron skillet – but you will still need a cast iron pan. Pop it in the oven as high as your oven will go as you cook your fajitas in another pan – we will be presenting them in the scorching hot cast iron – but cooking the fajitas in another pan.
  • Toss steak in fajita spices and cook them in a separate pan on the stovetop.
  • When steak is cooked through, and pan in the oven is SCORCHING hot, carefully remove cast iron from oven and place on a trivet or other safe and sturdy surface.
  • Working quickly (carefully!) add sliced peppers and onions to pan, then place steak over it.
  • Quickly pour 1 tbsp soy sauce and 1 tbsp oil into the pan – it will start sizzling just like at a restaurant!
  • Let vegetables cook as the sizzling dies down, serve, and wow your guests with a sizzling plate of fajitas!

  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • Steak Fajitas
  • 2 tbsp avocado oil , or other high heat oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 lb stir fry steak strips
  • 1 white onion, sliced into half rounds
  • 1 bell pepper, sliced into thin strips
  • 3 cloves garlic, diced
  • 1 jalapeno, sliced
  • 1/4 cup cilantro chopped
  • 2 oz lime juice

Instructions

Steak Fajita Seasoning

  1. In a small bowl, mix cornstarch, chili powder, salt, paprika, onion powder, garlic powder, cayenne pepper, and cumin and mix well.
  2. Set aside.

Steak Fajitas

  1. Season steak strips generously with salt and pepper.
  2. Heat a cast iron skillet on medium until extremely hot (but not smoking).
  3. Add oil to pan and swirl around until shimmery.
  4. Add steak to pan and let brown, stirring often. Steak should cook quickly if heat is high enough, so stir often to prevent sticking or burning.
  5. When steak is browned (after about 2 minutes) - but not cooked through - add onions and peppers.
  6. Let steak, peppers, and onions cook until vegetables are browned and soft and steak is cooked through, about 4 minutes.
  7. Sprinkle seasoning mix over chicken and vegetables and stir to coat, adding lime juice to help coat. Add up to 2 tbsp water if needed to spread seasoning more evenly.
  8. Turn off heat and sprinkle with cilantro. Serve immediately.
