Easy Everything Low Carb Bagel

When we’ve gone on low carb diets, the one meal I am always stuck for ideas is breakfast – until I started making these cheesy keto everything “bagels”. I love puffy, light baked eggs with tons of cheese, baked in a perfect bagel shape, that are great with cream cheese or as a keto breakfast sandwich!

I love bagels – especially hot toasted everything bagels – and decided to play around with my Keto Jalapeno Bread recipe a bit to come up with a real bagel I think is every bit just as delicious as my favorite everything bagels. Just like my everything bagel fat bombs, this one is incredibly low carb keto with NO special flours or crazy ingredients – just cheese, eggs, and Everything Bagel seasoning!

How to Make Carb Free Bagels

First assemble the following ingredients:

  • Shredded cheese (1 cup) – I like to use cheddar, mozzarella, any kind of cheese that melts well, they create a chewy, cheesy base for the keto bagels.
  • Grated parmesan (½ cup) – Adds a salty, nutty bite and helps the bagels hold their structure, you can also use asiago or Pecorino Romano.
  • Eggs (2) – Bind the ingredients together while giving the bagels lightness and richness.
  • Everything bagel seasoning (2 tbsp) – Brings the classic garlicky, oniony crunch with sesame and poppy seeds for authentic bagel flavor.

Once you have assembled the ingredients, use this method:

Prep

Preheat oven to 375 degrees Fahrenheit. Grease a donut baking pan.

Mini pizzas in a muffin tin with sesame seeds, using the Everything Bagel Mix for a low carb and keto-friendly twist.

Mix

Combine the shredded cheese, grated parmesan, and egg in a bowl and mix it until the ingredients are fully combined. Divide the mixture equally into six parts and press into well greased donut pan. Sprinkle everything bagel seasoning over the tops of the egg and cheese mixture.

Bake

Bake at 375 degrees for about 15 to 20 minutes until the cheese has fully melted and created a slight brown crust. Let cool slightly until it is safe to touch and has set, then slide out of pan and eat!

Tips and Tricks to Perfect Low Carb Bagels

Spray Well – I did find even with preparing the pan with coconut oil spray, my bagels very slightly stuck to the donut pan – but it didn’t ruin their shape or appearance at all.

Remove Carefully – I simply slid a butter knife around the edges of the bagels to pop them out of the pan, and they were perfectly fine.

Try Silicone – To avoid any sticking, try to use a silicone donut pan. If you don’t have one, like I don’t, the butter knife trick works just fine.

Cool Slightly – I do find it is easier to release the bagels from the pan if they are slightly cooled (still very warm, but not so hot you can’t touch the pan without an oven mitt.)

Keto bagels are done baking when they are light, puffy, and lightly browned around the edges.

Can I make keto bagels without cheese?

This recipe relies on cheese and egg for it’s structure since we’re skipping flour – as it’s designed to be a very quick mix for busy mornings. You can use a cheese substitute, however I have not found one that will bake with the right texture of cheese and doesn’t include high carb counts if you’re trying to stay keto.

Can keto bagels be frozen?

While these can technically be frozen, I wouldn’t recommend it since they are basically cheese and egg which both have an awkward texture after frozen. You can reheat them on a sheet pan in the oven from the fridge, but you only get a crunchy texture when they are fresh.

Feel free to mix up your cheese selection – but stick with one grated hard, dry cheese (like parmesan or asiago) to keep the flour-like texture.

    Please add one last step. How long should it cool down before I ‘spoon’ it out of the molds? Thank you. They just came out of the oven and I guess I will wait for a few minutes and see if I can ‘yank’ them out of the mold. Exciting 🙂

      You will want to let them sit for just 30 seconds and then turn them out and cool completely, if you are using a silicone pan for them it will be easy to turn them out either way. Thats a good question, and I will update the instructions to reflect the cool time.
